Crab Cakes & Portobello Mushrooms

Tonight's dinner special - Crab Cakes on Portobello Mushrooms

Crab Cakes:

1 lb. of Lump or Claw Crab Meat
1/3 cup fine bread crumbs
1 tsp. Dry Mustard
1 tsp. Old Bay Seasoning
1 Tbsp. finely diced Red Bell Pepper
1 Tbsp. finely diced Yellow Bell Pepper
1 Tbsp. finely diced Orange Bell Pepper
1 Tbsp. finely diced Green Bell Pepper
1 Tbsp. finely diced Red Onion
1 Tbsp. fresh Parsley, chopped
1 Tbsp. Lemon juice
1 Tbsp. Worcestershire Sauce
1 Tbsp. Mayonnaise
Salt and pepper to taste

Prior to mixing ingredients, make sure the crab meat is a dry as possible. I place it in some cheese cloth or paper towels and press all the excess moisture out. Overly moist crab will make for mushy cakes.

Mix all ingredients together and form into four mondo crab cakes. Line a dish with waxed paper, place crab cakes in dish and cover with waxed paper. Place in the freezer for at least 1/2 an hour prior to cooking.

Portobello Mushrooms:

Clean four large Portobello Mushrooms by removing the dark brown gills and stem. I do this by scraping the inside of the mushroom with a small spoon.

I make a mixture of 1 Tbsp. Extra Virgin Olive Oil, 1/2 stick of Butter, two cloves of Garlic (finely chopped) and 1/2 Tbsp. of Red Onion (finely chopped) and heating it until the garlic and onion are softened. I let this sit until I need it for basting the mushrooms.

Heat up 1 Tbsp. Olive Oil in a cast iron skillet. Place the crab cakes in the skillet and saute crab cakes until light golden brown on one side. Turn crab cakes, and place in a 350 degree oven for 25 to 30 minutes.

While the crab cakes are cooking, baste the mushrooms with the garlic/onion butter and place on a hot grill, cleaned side down. After 5 minutes, turn the mushrooms and baste heavily with the garlic/onion butter. Grill another 5 minutes. Remove from the grill

Crab Cakes ready for the oven....


Place the four grilled mushrooms on a foil lined sheet pan, remove the crab cakes from the oven and place one on each mushroom. Return crab cakes/mushrooms to the oven for another 5 to 10 minutes.

Remove from the oven, garnish with a sprig of parsley, and serve.

Completed dish served with Caesar Salad...
Again, pretty tasty........
